Light, Medium or Dark Roast? How to Choose Your Coffee

Choosing a coffee roast can feel more complicated than it should. Light, medium or dark? Espresso or filter? And does a darker roast always mean stronger coffee?

The short answer: there is no single “best” roast. The right choice depends on the flavours you enjoy and how you brew at home. This guide will help you find your starting point—without the coffee jargon.

What does roast level actually change?

Roasting transforms green coffee beans into the aromatic brown beans we recognise. As the roast develops, acidity, sweetness, body and origin character shift.

  • Light roasts usually preserve more of the bean’s distinctive origin flavours. Expect brighter acidity, delicate aromas and clearer fruit or floral notes.
  • Medium roasts balance origin character with caramelised sweetness. They are often smooth, rounded and easy to enjoy across several brewing methods.
  • Medium-dark roasts bring more body, lower perceived acidity and deeper chocolate, nut or caramel flavours.
  • Dark roasts emphasise roast character: bold body, smoky or bittersweet notes and a lingering finish.

Roast level does not improve or reduce the quality of the bean. It simply reveals a different side of it—rather like the same cat choosing between a sunny windowsill and a cardboard box.

Is dark roast stronger?

Dark roast usually tastes stronger because the flavour is bolder and more roast-forward. That does not automatically mean it contains more caffeine. The exact caffeine in your cup also depends on the coffee dose, bean density, grind size and brewing method.

If you want a powerful morning flavour, choose a medium-dark or dark roast. If you want to taste more of the coffee’s fruit, sweetness and origin, begin with light or medium.

Which roast is best for your brewing method?

Espresso machine

Medium to medium-dark is the easiest place to start. These roast levels tend to produce a rounded espresso with enough body to hold its flavour in a flat white or latte. Prefer brighter, fruitier espresso? Try a light roast and adjust your grind carefully.

Filter or pour-over

Light to medium roasts usually shine here. The cleaner brewing style allows delicate fruit, floral and spice notes to come through. If you prefer a fuller, more chocolate-led filter coffee, choose medium-dark.

Plunger / French press

Medium or medium-dark roasts work beautifully in a plunger, offering a smooth mouthfeel and satisfying body. Use a coarse, even grind and avoid leaving the coffee sitting on the grounds for too long.

Milk-based coffee

For flat whites, cappuccinos and lattes, look for chocolate, caramel, nut and molasses notes. Medium and medium-dark roasts usually remain clear and comforting once milk is added.

Find your flavour, then choose your roast

Origin matters just as much as roast level. Start with the flavour profile that sounds most like you:

  • Smooth, nutty and low-acidity: Brazil Cerrado offers chocolate, roasted nuts, caramel and nutmeg. It is an approachable everyday coffee and a friendly choice for anyone sensitive to brighter acidity.
  • Balanced chocolate and fruit: Colombia Supremo combines chocolate, stone fruit and molasses with a smooth, well-balanced cup.
  • Rounded, sweet and a little more distinctive: Costa Rica Don Claudio brings plum, roasted almonds and molasses together in a rounded profile.

  • You like bright, fruity or delicate coffee: choose light.
  • You want balance and natural sweetness: choose medium.
  • You enjoy chocolate, caramel and a fuller body: choose medium-dark.
  • You want bold, intense roast flavour: choose dark.
